Ridiculously Easy Empanadas: Incredible Flavor Without The Hassle

The secret to the world’s easiest empanadas is pizza dough! This will save you a lot of time and effort – instead of making the dough from scratch, you can use store-bought and have these ready in no time.

Sometimes I like to add browned ground beef to my empanadas, to make them heartier. I often have these for a quick lunch when there’s no time for cooking. In fact, I like to make a bunch of these in advance and then just freeze them – that way I always have a quick snack ready to take with me, on those days when my schedule is crazy.



2 tablespoons Bertolli olive oil

1 package refrigerated pizza dough (about 1 pound)

Gold Medal flour for your work surface

1 (16 ounce) can black beans

1 (16 ounce) can corn, drained (use about half the corn for the empanada and the rest for garnish)

2 avocados, cut into small chunks

2 cups prepared salsa

1 (8 ounce) package shredded cheddar cheese

Daisy sour cream for garnishing



Preheat your oven to 400 degrees F. Use about a tablespoon of the oil to lightly coat the baking sheet.

Separate the pizza dough into six portions. On a lightly floured surface, roll each portion into a round shape, about eight inches in diameter.

Use half of each round to hold your ingredients: Spread out the beans (leave about half an inch of dough at the edge), and then top with two tablespoons of corn, salsa, avocado and cheese.

Fold the empty half over the filling and use a fork to seal the edges closed.

Use the remaining olive oil to lightly brush the tops of the empanadas. Place on a baking sheet and bake until lightly golden (about 12-15 minutes).

Serve with sour cream and corn as your garnish.




Quick tip: This recipe serves approximately 4 to 6. Double it for a crowd!

If I make extras to freeze for a later time how do I cook them??? Do they need to be defrosted first??? I definitely plan on making these,, my daughter just mentioned the other day that she would “DIE” to have some!!! LOL so realizing she likes these that much I would love to have them easily available for her… Thank You
