St. Patty’s Party Reuben Sliders

I have discovered through experimentation with these at home that you can actually make them ahead of time and keep them in the fridge. Then, about a half hour before your guests are going to arrive, just pop them in the oven and they’ll be nice and toasty when they get there. Check out what they are saying about this recipe over at Spend with Pennies:

“This recipe takes the amazing reuben flavors you love, layers them in slider rolls (or dinner rolls) and bakes them until they’re warm and the cheese is melty.”

If you love reuben sandwiches, you are going to adore these sliders. All the flavor in half the time.

Ingredients

12 King’s Hawaiian dinner rolls

8 oz corned beef, thinly sliced

8 oz Kraft swiss cheese

⅓ cup thousand island (or Russian) dressing

1 cup sauerkraut, squeezed dry

Topping

¼ cup butter, melted

1 tablespoon dijon mustard

½ teaspoon garlic powder

1 teaspoon dried minced onion

½ teaspoon caraway seeds (optional)

Instructions

Preheat oven to 350 degrees.

Whisk together topping ingredients in a small bowl.

Cut the rolls in half separating the top and bottom.

Place the bottoms of the rolls in a 9×13 pan (I line with parchment paper for easy removal).

Spread dressing on rolls. Top with a layer of cheese, sauerkraut, corned beef and another layer of cheese.

Top with the other half of the rolls and gently spoon or brush the butter mixture overtop.

Bake about 20-25 minutes or until the cheese has melted and the tops are lightly browned. Serve warm.
