Spice Things Up With A Southwestern-Style Potato Bake

 

The only prep you need to put this meal together is dicing up a few vegetables and then you can simply toss it all together and throw it in the oven. This recipe combines a delicious mix of flavors including ground beef, taco sauce and seasoning, hash brown potatoes and Cheddar cheese.

 

With the unique flavors that go into this potato bake, it gives enough of a traditional flavor for picky eaters to enjoy, but switches things up just enough to make it exciting. Try this instead of tacos the next time you are having a craving for Mexican!

 

 

Ingredients

2 teaspoons Bertolli olive oil

1 pound ground beef

1 package Old El Paso taco seasoning

1/2 onion, diced

1/2 red bell pepper, diced

1 cup Old El Paso taco sauce

2 bags refirgerated Ore-Ida hash brown potatoes

2 cups Kraft shredded Cheddar cheese

salt and pepper

 

 

Instructions

Heat a cast iron fry pan over medium-high heat.  Add olive oil. Brown the beef, add in taco seasoning and mix well.

 

Add 1 cup of water to the pan. Bring to a boil and continue cooking until most of the water has cooked off.  Add onions and peppers to the pan. Sautee until the veggies are soft.

 

Meanwhile, preheat the oven to 350 degrees F.

 

Mix in taco sauce and hash brown potatoes. Stir to combine well.

 

Top with the cheese and then transfer the pan to the oven. Bake until the potatoes are cooked through and the cheese is melted, bubbly and lightly golden brown. (about 20-25 minutes)

 

Remove from the oven and allow to cool for 5 minutes before serving.
