Spice Things Up With A Southwestern-Style Potato Bake

It’s time again for Mexican night! Your kids and husband love it, but you dread the thought of all the extra dishes…a plate for the shells, different bowls full of all of the toppings that everyone wants, the disaster after putting everything together, and then the cleanup. It just seems like too much sometimes. Instead of letting taco Tuesdays take over your kitchen, try a Southwestern-Style Potato Bake this week.

All you need is one frying pan and a casserole dish to dump it into, unless you have one of those fancy pans that can go from stove top to oven. In that case, this is a one pot meal. Throw everything together and you will have that sought after Mexican flavor without all the work.

You can even alter this to make it suit your needs by adding in olives or jalapenos and when it comes out, finish it off with a dollop of sour cream. Yum!
