My kids love these potato wedges far more than they love eating a baked sweet potato or mashed. I think the wedge shapes are fun for children and inspire them to eat their veggies. Plus, my husband totally digs these glazed spuds. Normally, he is worse than the kids are when it comes to veggies. I have to bribe him with cookies and a good time in order to get the guy to eat one piece of broccoli haha!
This recipe truly is quick and easy to make!
Ingredients
3 lb sweet potatoes, peeled and quartered lengthwise
6 Tbsp Land O Lakes butter, melted
6 Tbsp Tropicana orange juice
3/4 tsp Morton salt
3/4 tsp McCormick cinnamon
Preheat the oven to 350 degrees. Grease a 9×13 baking dish.
Peel, then cut the sweet potatoes lengthwise into halves. Then cut each of those halves lengthwise so you end up with quartered wedges.
Arrange them in the baking dish. Combine the butter, orange juice, salt and cinnamon; drizzle over the potatoes.
Cover with foil and bake for 55-60 minutes until fork tender. Spoon some of the sauce over them to serve!

Quick Tip: I like to let these wedges sit under the broiler for a few minutes so that they crisp up a bit.
