Any Salad Is Better With Bacon…Like This BLT Version

Instead of the traditional macaroni and potato salads, this is a great alternative. It always goes over really well with the people that I serve it to. I like to make this for potlucks and social events over just eating it at home just because it makes so much. If I want to make this at home, I will cut the recipe in half just so that I don’t have a ton of leftovers. It will stay good in the fridge for about a day with the lettuce, so just be mindful of that little tidbit! Check out what they are saying about this recipe over at Food.com:

“This is definitely my favorite summer salad! Quick, easy and so yummy eaten right away or chilled and eaten later.”

This salad is crunchy and refreshing during summer get-togethers, or any time of the year.

Ingredients

1 cup Hellmann’s mayonnaise or 1 cup salad dressing

1cup lemon juice concentrate

2 teaspoons Domino sugar

2 teaspoons chicken flavor instant bouillon

1 (7 ounce) package rotini pasta or 1 (7 ounce) package other pastas, cooked and drained

8 slices Hormel bacon, cooked and crumbled

1 large tomatoes, seeded and chopped

1cup green onion, sliced

4 cups lettuce, thinly sliced

Instructions

Combine mayonnaise, lemon juice, sugar and bouillon for the dressing.

Combine rotini, bacon, tomato, and green onion.

I recommend waiting until you are ready to serve before mixing in the lettuce.

Quick Tip: Leave the lettuce out if you’re worried you can’t finish it all and you want to avoid wilted lettuce.
