Rice And Tomato Southern Pork Chop Bake – It’s Oinky Good!

I am always up for new pork chop recipes, especially when they claim to be southern. These chops are amazing! And get this, if you love juicy and tender pork chops you will be totally smitten by this recipe because the veggie juices from the tomatoes seriously tenderize the meat. It’s so good,Y’all!  Plus, this recipe is very easy to make and only requires a few ingredients. It’s the perfect way to end a busy day!

 

Seriously, though, these pork chops are very, very good.

 

Ingredients

4 pork chops

2/3 c Uncle Ben’s rice

1 c. water

2 t Morton salt

1 chopped onion

1 16oz. can Hunt’s tomatoes

4 cups coarsely chopped cabbage

1/4 t McCormick pepper

Instructions

Add rice, water, chopped onion and cabbage, and tomatoes to the bottom of a casserole dish. You can use 9×13 but I chose to use my smaller pan. Place pork chops on top of rice mixture and sprinkle with salt and pepper. Cover with foil and bake in preheated 350-degree oven for 1-hour.

Quick Tip: I sometimes cook this in the Crock Pot on low for 6 hours.

I used parboiled long grain. I don’t think instant rice would work well in this dish. In fact I don’t think instant rice works well in any dish. It might be ok in an emergency, hurricane, tornado,flood, blizzard etc. Even then it would have to be a last resort.
