This Kid-Approved Dinner Is A Busy Mom’s Favorite Recipe!

The other day, I found myself neck deep in projects that needed to get done. I had gotten up at 4am to get started. By the time 6am had rolled around it was time to get the kids up for school and it was then that I realized I had nothing planned for dinner when they arrived back home off the bus. So, between coaxing sleepy children out of bed, getting backpacks sorted, and finding mismatched socks, I got out the trusty old Crock Pot and got to work. I really shouldn’t refer to this recipe as “work” because it is so simple that it’s stupid!

Seriously, all you do is chop up some chicken breasts and throw them in the slow cooker with a few other ingredients and then in about 7 hours you have a delicious, hot, and satisfying meal. Can it really be that simple?

Yes! My husband and kids really liked this slow cooker chicken casserole and I served it with green beans and rolls. My little guy insisted that we each have a scoop of homemade applesauce so we included some onto our plates, too. It was a great meal!
