Rain Forest Casserole – A Plethora Of Exotic Flavors You Will LOVE

Are you a fan of taco salad? If so, this Rainforest casserole will be right up your alley. it combines all sorts of exotic flavor pairings that are sure to make you lick your lips and ask for more. Check out the condiments list at the bottom of the page and don’t be shy to try something new! I love this recipe! You wouldn’t think bananas would make a great condiment for this stuff but let me tell ya, don’t knock it before you try it!

I’ve eaten this casserole in a taco bowl before. Yummy!

 

Ingredients

1-2 cups rice – I use Basmati

 

1 1/2 lb. hamburger

 

1 meduim onion chopped

 

Morton salt and pepper to taste

 

1-2 tsp. McCormick curry powder (you can add more if you like)

Instructions

Cook rice according to instructions.

 

Fry up the hamburger and onion, breaking it up as it browns. Remove as much fat as you can.

 

Add the seasonings and cook another minute or two.

 

Serve family style. To assemble, place hamburger over the rice on your plate and then add the condiments.

Condiments

grated Kraft Cheddar cheese

 

shredded lettuce

 

chopped cucumber

 

raisins

 

sliced bananas

 

diced canned or fresh peaches – mangos would work too

 

chopped peanuts

 

shredded coconut

 

chopped red onion – if desired

You can vary the condiments according to what your family likes. You do need something juicy, like mango or peaches otherwise, pick and choose according to your taste. Chutney would be a good addition as it is traditionally served with curry.
