Nostalgic Chicken Noodle Soup On A Cool day

When I was just a little girl, I easily got sick. I have the worst type of allergic rhinitis. Whenever I started sneezing in the morning, I couldn’t stop. Sometimes, the sneezing waned after an hour, but sometimes, it led to fever and colds. My Mom used to make me this wonderful chicken noodle soup whenever I got sick. It was simple; just noodles cooked in chicken broth.

She used to add strips of chicken and chunks of boiled egg on it just to give it more flavor. It always never failed to make me feel better. The hotness of the soup created a soothing trail down my throat, warming my body instantly.

It was also a bit spicy that it always helped with my sinusitis. It didn’t have anything special on it, but it was a soup made of love. This chicken noodle soup recipe by Taste of Home will remind you of those afternoons when your mother took care of you during your time of weakness.

Quick Tip:  You can use rotisserie chicken. You can also shred the chicken instead of cubing it if you prefer finer bites.

where does the carrots and peas come into this recipe. Not in your ingredient list?? you always show pictures that obviously differ to your recipes

I was wondering about the carrots, I don’t see them in list of ingredients. Also is this the correct picture for this recipe. This looks like clear broth where as the ingredients last cream of chicken and sour cream which would make the both creamy not clear. Thank you

There are carrots and celery in that soup that aren’t included in the recipe. My chicken soup isn’t quite that quick to make; but, OMG, is it ever delicious! Whenever I bring it anywhere (usually eight quarts) there are never any leftovers! No shortcuts for this mom! Real chicken stock, homemade; lots of veggies; no canned soup allowed! I also cook my pasta separately and add it to the finished soup, so it’s never mushy. Yum!!
