Melt In Your Mouth Red Potato Salad Is All You Need This Summer

When it’s time for those summer BBQ’s to start up, I can’t wait to make this recipe for every one that I go to. Nobody ever complains when I bring the same thing for a few different events either. In fact, I’ve tried to bring something else a few times and everyone tells me how disappointed they are that I have shown up without the red potato salad that they have all come to love so much! Check out what they are saying about this recipe over at All Recipes:

Even my Grandma’s famous potato salad doesn’t stand up to this recipe…sorry Grams!

 

Ingredients

2 pounds clean, scrubbed new red potatoes

6 eggs

1 pound Oscan Mayer bacon

1 onion, finely chopped

1 stalk celery, finely chopped

2 cups Hellman’s mayonnaise

salt and pepper to taste

 

 

Instructions

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

Quick Tip: Green onion can be used in place of the regular onion.

Only 2 pounds of potatoes? Any recipe that calls for 2 cups of mayo usually calls for 4 to 5 pounds of potatoes.

Make this all the time but do put the mayo in a small bowl and add about 1/3 cup of the hot bacon grease and 1 tsp. of white vinegar. Mix it up and add to the potatoes Makes it more flavorful. Best potato salad ever!!!

I use green onion and mix the mayo with a pinch of salt, some olive oil and one finely crushed clove of garlic.
