Melt In Your Mouth Red Potato Salad Is All You Need This Summer

Last year, my sister and her husband bought a cabin on the lake. It’s fairly close to our house, and absolutely beautiful, so needless to say, we spent a lot of time there. Part of going there was the requirement of bringing a dish to pass. When I got to spend the weekend in my own little paradise, I didn’t mind whipping something up to share with everyone.

A lot of other people spent time there too, so we got to try out a lot of other people’s “famous” dishes. One weekend, a co-worker of my brother-in-law and his family came while we were there.

His wife made this red potato salad that I couldn’t get enough of. I was sneaking it from the fridge when nobody was looking! I had to get the recipe from her and she said she found it on All Recipes.

This is the dish that I’m going to be making this year I know that much! That way, I can have as much as I want…yummy!

Only 2 pounds of potatoes? Any recipe that calls for 2 cups of mayo usually calls for 4 to 5 pounds of potatoes.

Make this all the time but do put the mayo in a small bowl and add about 1/3 cup of the hot bacon grease and 1 tsp. of white vinegar. Mix it up and add to the potatoes Makes it more flavorful. Best potato salad ever!!!

I use green onion and mix the mayo with a pinch of salt, some olive oil and one finely crushed clove of garlic.
