Imagine Eating a Healthy Veggie Dish And Loving Every Bite Of It!

 

My family and my friends have their own versions of stir fry veggies. My friends who are moms think it’s the best way they could incorporate vegetables in their children’s diets. The children usually don’t care that it’s made of vegetables if it tastes so good! Our friend over at Two Peas And Their Pod has this to say about this recipe:

“We love making stir fry. It is so easy and it is a great way to sneak in lots and lots of veggies!! This time we added in tofu for protein…and we like the stuff!”

I could eat this all day. I love stir fry and I love tofu. I love stir fry because it’s easy to make. It won’t even take an hour for you to have such a delicious dish right in front of you. And tofu because it just easily absorbs any flavor. It blends so well with any other ingredients. This is a winner dish for me!

 

Ingredients

Sauce:

Onion, chopped

Garlic, minced

Bertolli Olive oil

Kikkoman Lite soy sauce

Water

Trader Joe’s Honey

Orange Zest, from one orange

Fresh Squeezed Orange juice, from one orange

Domino Light Brown Sugar

Jalapeno, sliced

1 Red Thai Chili

1/4 teaspoon Red Thai Chili paste

McCormick Pepper to taste

Argo Corn Starch

Nasoya Extra Firm Tofu, one package

Vegetables of your choice

Great Value Rice

 

Instructions

In a large pan saute the garlic and onion in the olive oil. Cook until tender. Add in the soy sauce, water, honey, orange zest, and juice. Stir to combine. Add in brown sugar and stir. Next, add the jalapeno slices, thai chili, and chili paste. Simmer for about five minutes. Taste, if you need to add anything, do so now. Add salt and pepper.

Stir in corn starch that has been mixed in a little water. Stir until the sauce thickens.

Marinade the tofu in some of the sauce, for at least 15 minutes. Grill on a grill pan on high heat.

Stir fry the vegetables in a little oil in a big wok. Add in the sauce and tofu. Stir fry until everything is cooked and tender. Make sure the sauce is coating the veggies and tofu.
