Fruitcake Cookie Bars Are Simply Amazing

This recipe was suggested by my friend who knew that I wasn’t fond of fruitcake. She just said that I should try this even just for once and that I should tell her how I feel after. Let’s just say she wore a smug look on her face when I told her my reaction. These fruitcakes are also very good as gifts. I just put them into these paper box containers, place ribbons on top, and voila—instant gifts.

My friends appreciate them all the time. Well, those guys will love anything sweet and flavorful. But this recipe is a genius.

 

 

Ingredients

1 Cup Domino Brown sugar, packed

2 Cups Bisquick Baking Mix

1 Eggland’s Egg

1 stick Land O Lakes margarine, melted and cooled

1 teaspoon McCormick vanilla

1 teaspoon McCormick cinnamon

1 + ½ Cups diced Dixie fruit cake mix (or diced candied fruit of your choice)

½ Cup Sun-maid raisins

½ Cup Kirkland sliced almonds

½ Cup Kirkland chopped walnuts or pecans

Instructions

Combine first six ingredients in large mixing bowl.

Mix until well blended. Stir in fruit and nuts.

Pat into well-greased 8×8 pan and bake at 350 for 30-35 minutes.

Allow to cool completely and then cover. Allow cookies to rest overnight before cutting into bars.

Makes 16-25 cookies, depending on how small you cut them.

Quick Tip: You can substitute butter for margarine in this recipe; however, these cookies have a longer shelf life and ship very well due to the margarine.
