Comfort Food At Its Best…Crock Pot Chicken And Stuffing

This meal is perfectly fine all by itself. It makes enough for our family of five usually. If I know some of us are going to be extra hungry though, I will often pair this up with some mashed potatoes and corn or green beans. It’s almost like a holiday meal for no special reason at all. It makes me feel like we can celebrate Thanksgiving all year round! Check out what they are saying about this recipe over at Group Recipes:

This is an excellent meal to make on those cold and blustery winter days. It really warms you up!

 

Ingredients

2 1/2 c. Swanson chicken broth

1 c. Land O’ Lakes butter

1/2 c. chopped onion

1/2 c. chopped celery

1/4 c. dried parsley

1 t. poultry seasoning

1 t. salt

1/2 t. pepper

12 c. day old bread; cut into cubes

2 eggs

1 can (10 3/4oz.) Campbell’s cream of chicken soup

5-6 c. cooked chicken; cubed

 

 

Instructions

Combine 1st 8 ingredients in saucepan and simmer for 10 min.

Place bread cubes in large bowl.

Combine eggs & soup. Stir into slightly cooled broth mixture until smooth.

Pour broth mixture over bread cubes and toss well.

Spray a 5qt. slow cooker with non-stick spray.

Layer half of the stuffing and chicken.

Repeat layers.

Cook on low 4 1/2 – 5 hours or until meat thermometer inserted into stuffing reads 160F.
