This meal is perfectly fine all by itself. It makes enough for our family of five usually. If I know some of us are going to be extra hungry though, I will often pair this up with some mashed potatoes and corn or green beans. It’s almost like a holiday meal for no special reason at all. This is an excellent meal to make on those cold and blustery winter days. It really warms you up!
Ingredients
2 1/2 c. Swanson chicken broth
1 c. Land O’ Lakes butter
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. dried parsley
1 t. poultry seasoning
1 t. salt
1/2 t. pepper
12 c. day old bread; cut into cubes
2 eggs
1 can (10 3/4oz.) Campbell’s cream of chicken soup
5-6 c. cooked chicken; cubed
Instructions
Combine 1st 8 ingredients in saucepan and simmer for 10 min.
Place bread cubes in large bowl.
Combine eggs & soup. Stir into slightly cooled broth mixture until smooth.
Pour broth mixture over bread cubes and toss well.
Spray a 5qt. slow cooker with non-stick spray.
Layer half of the stuffing and chicken.
Repeat layers.
Cook on low 4 1/2 – 5 hours or until meat thermometer inserted into stuffing reads 160F.
