A Bad Morning Made Better By This Chicken Cordon Bleu Casserole

Whenever I have a bad morning, there is only one cure. Food. For some reason, my boyfriend knows when I am waking up in a bad mood. I guess he already knows me better than I know myself because whenever I wake up and I don’t feel good, he will be in the kitchen waiting for me with something that will surely brighten up my day. It will be something new, a dish that he just recently discovered.

Or it will be an old favorite that he knew I wouldn’t be able to say no to, like blueberry pancakes with plenty of whipped cream and nuts or chocolate chip pancakes. Just recently, I woke up to the smell of melting meat and cheese. I thought it was that tater tots casserole he made me before. However, when I entered the kitchen, I knew it was something better.

He told me he found this recipe in one of my bookmarks while he was using my laptop and thought that he would make it one morning just to try it out. It happened to be this morning when I wasn’t in the right mood. Well, it worked. After finishing my first serving, my mood really started to lift until I was finally laughing with him. I think I just had one of my best days ever!

Quick Tip: Freezer Instructions: Follow recipe above. Allow casserole to cool. Cover with several layers of foil (to prevent freezer burn) and freeze. When ready to eat, place in fridge to thaw for 24 hours in advance. Reheat, serve, and enjoy.
