My grandmother used to make these yummy fruit-filled cookies every year during the holidays. I just loved how they looked and tasted! Grandma would roll out the shortbread dough and then use a special fruit jam to place in the middles. Such a fun memory! I can just see those delicious cookies sitting on a holiday platter on the table right now!

When i came across this recipe for raspberry almond shortbread cookies on the Peanut Butter and Peppers blog I was THRILLED. These cookies look exactly like my dear old grandmas! I plan to double this recipe and save a batch for my family and take a batch with me to a cookie exchange that is going on at my church.
