My Dad was coming for a visit recently, and we were all so excited to see him. It had been months since he had been our way. After he retired, he decided that he wanted to travel the country, so that’s just what he did. We missed him terribly but we were so thrilled that he was getting to do something that he really wanted to.
One thing that he missed out on the road was homemade food from the kitchen. Sure, he would stop at local diners and things to get decent food, but it was nothing like a homemade meal.
He always loved my enchiladas, so I decided I would make those, with a little twist that I found on All Recipes. I was excited for him, and the rest of the family to try it. It was really easy to make and it looked amazing when it came out of the oven.
The taste was pretty darn good too! Dad nearly cleaned out the whole pan himself!
