You’ll Never Eat Alone With This Casserole On The Table

Soccer Saturdays…the dreaded soccer Saturdays every fall and spring. My kids love the sport, so I will do anything to help them reach their goals in their athletic career, but soccer Saturdays are perhaps the least favorite days of the entire year for me. We are always stuck at the fields from the time we wake up until just about dinner time, if not later. They just play and play all day long.

If the weather is nice, it isn’t so bad. A lot of times, it’s cold and rainy though, so by the end of the day I am miserable. The last thing that I want to do is go home and stand on my feet in the kitchen cooking.

That’s why one of my favorite go-to meals on these days are tater tot casserole. This one from Recipe Lion is super simple to put together and it cooks up really quickly.

It’s the perfect homemade meal to enjoy after standing outside in the cold all day long. The kids really enjoy it too so it’s perfect for your picky eaters.
