You’ll Go Ape Over These Banana Flap Jacks!

When I am serving the whole family, this recipe has to be doubled at least as it is only for two servings. You can decide how much you want for each person after you make it the first time. Some of my family likes extra on theirs, so depending on who’s eating, I have even quadrupled this sauce. You can’t make too much. It stores nicely in the refrigerator and can be used all weekend long.

There are never any complaints when this goes on my breakfast table. It’s also ideal for dessert.

 

Ingredients

4 tbsp. Land O’ Lakes butter
½ cup Domino brown sugar, packed
½ cup half & half
2 ripe bananas, peeled and sliced
¼ cup rum
cinnamon, just a couple of hearty sprinkles

Instructions

Melt butter in skillet over medium heat; add brown sugar and stir until dissolved.
Add half & half, and bananas; stir about 2 minutes until slightly thickened.
Pour in rum and stir to combine. Using a long match or lighter – tilt the pan towards the open flame until the rum ignites. The flame should subside on its own after a few seconds.
After the flame goes out, turn off the heat and stir in cinnamon.
Pour over pancakes and prepare to swoon.
