Out-Of-This-World Veggie Quesadillas

When my kids were very little, I discovered that getting them something to eat in a few seconds was necessary.

It wasn’t always the easiest thing to do, because I didn’t have a whole lot of options. I remembered when I was younger, my mom would give us a tortilla shell with cheese melted in the middle of it for a quick snack, so I tried them out on my kids. They loved them. We would have them a few times a week. It was super easy for me and as long as they liked them, it was a winner in my book.

As they got older, I wanted to introduce some new flavors to expand their pallets. That’s when I came across this recipe for chicken and broccoli quesadillas on Facebook. I was skeptical, but I figured I would give it a try. They actually acted like they didn’t even notice the difference.

It was flavorful enough for me to enjoy too. Now when I need something quick to eat, I will whip some of these together. My kids still love them to this day and will actually request them when I give them the choice of what’s for dinner.

It’s an excellent way to get some protein and vegetables into your diet, or your children’s.

Quick Tip: Use flour tortillas instead of wheat if that’s what’s available.
