You Won’t Find Any Mushy Buns In This Chili Dog Casserole

Each and every summer, my mom couldn’t wait for the ice cream place in our town to open up.

They didn’t have enough business to stay open all year round, so it was a real treat when they finally flipped that OPEN sign on. We were always there on the first day! You would think it was for the ice cream, but in reality, my mom didn’t even like ice cream. She still doesn’t. She went there for the food.

They had, what she said, were the best chili dogs ever. I never really saw the appeal in them myself. I mean, they smelled good, but they were so messy. By the time she was done eating one, there was chili all over the place.

She usually ended up throwing half the bun away too because it was so soggy and falling apart. When I found this recipe that claimed the bun wouldn’t get soggy, I finally tried my first chili dog. It was actually really good. I made them for Mom for dinner one night and she said…”Now that’s the BEST chili dog EVER!”
