You Barely Have To Lift A Finger To Make This Hearty Breakfast For The Fam

Last spring, Easter Sunday was coming around the corner, and we had so much to do. We had two special dinners to attend, along with our own celebration with our kids at home, and of course church services on Sunday. I usually like to make special holiday breakfasts, but with everything on our schedule, I wasn’t sure that I was going to have the time.

I asked the kids if we could skip early morning breakfast this year, because I was all out of ideas. That’s when my oldest daughter came to me with a recipe for breakfast egg muffins that she had seen online.

She said, “Aren’t these so cute Mom? I wonder if they are hard to make…” So, of course, I had to investigate a bit further. I was happy to find out they were, in fact, extremely easy to make.

I told her that she had just saved Easter breakfast, because we were making these now and saving them for later in the week. On Easter morning, we had plenty of time to enjoy our traditional breakfast and I hardly had to spend any time at all in the kitchen!
