Weekender Chicken, Bacon, And Tater Soup

When I lived at home with my parents, I remember quite vividly, as soon as the temperatures started to drop off, the crock pot came out. The soups, stews, and chili flooded the house from fall until spring. Don’t get me wrong…I loved it! There’s nothing like a nice homemade soup or stew to warm you up on a chilly afternoon. My mom was the master at whatever she put in that slow cooker.

Some of my favorites were her chicken noodle soup and Super Bowl chili, but there was a potato soup that she made only once in a while that was simply divine. It was like no other potato soup that I had anywhere else. It was so rich and delicious, I could never get enough of it.

I found a recipe on My Recipes that reminded me exactly of the way she used to prepare it. Now that I have my own copy of the directions, I make it for me and my loved ones throughout the colder winter months.

I usually have to double or triple the batch because it gets cleaned out so quickly! As long as my family likes it, I don’t mind doing it for them…as long as they save some for me!
