Wednesday Night’s Simple Fried Chicken Cutlets

I want to eat well, I don’t want to cook, I don’t want takeout, I don’t want freezer food….ahhhhh….a classic Wednesday night at my house. It’s the middle of the week and nothing sounds good. I’m in that middle of the week slump where all I want to do after work is relax, so spending a ton of time in the kitchen is out of the question. We have dinner plans out on Friday night so I don’t want to eat out two days before that.

To the internet I went to find an easy, yet yummy entree that I could make at home. That’s when I found this recipe on Serious Eats. It looked like it was offering everything I was looking for so I took to the kitchen.

These chicken cutlets fried up quickly and they were one of the best forms of the poultry that I had ever tasted. I will be saving this recipe for many more Wednesdays to come!
