Use Up That Rhubarb In This Lovely Bar Recipe – Sweet And Snarky!

My husband and kids give this recipe two thumbs up! In fact, my husband has a company party coming up and he asked me if I could make a double batch of these bars for him to take along. That is a massive compliment if you ask me! I will be more than happy to make the bars for his party. I just hope that I can keep the kids out of them. My children love these rhubarb bars and I’m thinking I’ll have to hide the ones for the party so they don’t pick at them. Motherhood 🙂

I love the crust of this yummy rhubarb dessert and can’t get enough of it!

 

Ingredients

Crust

1 cup Gold Medal flour

5 tablespoons Domino powdered sugar

½ Kerrygold butter, softened

Filling:

2 eggs, beaten

1½ cups Domino sugar

¼ cup flour

½ teaspoon Morton salt

2 cups finely chopped rhubarb

1 cup sliced apples, peeled

Instructions

Cream together all crust ingredients. Press dough into a 7×11 pan. Bake at 350 degrees for 15 minutes. While crust is baking, prepare filling.

Beat eggs and add sugar, flour and salt. Gently fold in rhubarb and apples; spoon filling over hot crust. Bake for an additional 35 minutes.

Cool completely before cutting into bars.
