Tropical Island Feeling Coconut Shrimp

Every year for my father-in-law’s birthday, we take on the responsibility of hosting the dinner portion of the evening. Usually, it’s just a few close friends and some family with a group total of about thirty people or so. It’s really no big deal. I like to be able to give everyone a belly full of food before they go after the cake! My father-in-law absolutely loves seafood, but he doesn’t get to eat it that much. I remembered a time when we went to a restaurant and he got the coconut shrimp and couldn’t stop talking about it the whole way home.

I decided that would be our main appetizer this year. I found a recipe on All Recipes that was going to work out perfectly. I quickly made it up for the guests arrived, and saved a special plate for Dad. He was so thrilled about it, he didn’t even care about his presents!

Everything was put on hold until he finished his plate of his favorite seafood. I think I’ll be making these again next year…just saying!
