My son’s school was hosting his first dance as a junior high student. I couldn’t believe how fast my little boy was growing. Jr. High already? It seems like it was just yesterday when I dropped him off at pre-school. At any rate, it was happening, and there was nothing that I could do to stop it. He has always liked me to volunteer and chaperone for his many events through the school. I’m not sure why, but as long as it lasts, I’m taking advantage.
So, for this particular dance, they were also going to serve a meal. As an adult volunteer, I got put in charge of potatoes. I thought about just making the regular potatoes that they get all the time for school lunch, until I found this recipe on Julie’s Eats & Treats.
It was just as easy, but with so much more flavor. It looked a lot fancier too…perfect for a party. The kids all loved these and kept coming up to tell me how good they were. My son just gave that look like, “Yup…that’s my mom!” I’m so happy I can make him proud.
