Take Your Potatoes From Drab To Fab With Crab!

What I like most about this recipe is it can easily be doubled or tripled for larger dinner parties. These are perfect to serve to even the most uptight of guests…not that you know any of those kind of people. Instead of serving out a traditional mashed, baked, or scalloped potato, these add a bit of flare and glam to your dinner or lunch event. People will think you have spent hours in the kitchen! Even though potatoes are traditionally a side, this is enough to be a whole meal!

 

Ingredients

3 large baking potatoes

1/2 cup more or less Daisy sour cream

1/4 stick Land O’ Lakes butter

1 jalapeno pepper minced

1 clove garlic minced

2 green onions sliced thin

1 tsp kosher salt

3 turns of black pepper mill

1/2 cup Kraft mozzarella cheese cut VERY small pieces

1/2 to 1 cup minced lump meat crab

 

 

Instructions

You can micro potatoes however I find oven baking

gives a firmer skin

Bake remove from oven and cool slightly

remove potato from skins and place in bowl

mash roughly and add crab and cheese and fluff with fork

in heated pan melt butter and add pepper onion and garlic; salt and pepper

cook just until softened

add to potato/crab mixture

mix gently

place mixture in the six potato skins

heat oven to 325

place potatoes on cookie sheet and heat in oven

serve with dollop of sour cream on top with fresh chopped parsley (optional)
