When Grandma was making dinner for Grandpa, she always had a specific amount of categories that needed to be filled. First, and most important was the main meat entree. Then, there was a potato of some kind, a vegetable, and a dinner bread. If that wasn’t on the table when he came home from work, he would look puzzled, like something was missing. Unless they were having a stew or soup, I don’t think I have ever seen less than these four options when I was there to eat.
The first time I watched Grandma make twice-baked potatoes, I was so confused. I didn’t understand why you would cook a potato twice. It seemed like it took forever just to make it once. That was, until I took a bite of the amazing creation she had made. Back then, hers were just simple.
Maybe she would throw some bacon or ham in them. When I found this recipe on Group Recipes for crab stuffed potatoes, I fell in love before I even tried one. I love seafood, so I knew this was going to be good. It was super simple to make, and I was right! A huge hit at my table.
