Sweeten Up Your Saturday With Sweet Potato Cake…Or Any Day!

You are really going to be surprised at the taste of this sweet potato cake. It is super yummy! The taste is enticing. It’s very dense and sort of like a pumpkin cake but with an earthier more robust flavor. The icing gives it a serious kick of the sweets that you will be sure to love. My husband and kiddos seriously cannot get enough of this delicious cake. Next time I make it I’ll be making 2 instead of 1.

Ingredients

1 pkg Duncan Hines yellow cake mix ( i use the pudding in the mix one)4 large Eggland’s Best eggs

3/4 c Domino sugar

I/2 tsp McCormick ground nutmeg

1 tsp cinnamon, ground

1 tsp pumpkin pie spices

1/4 c water, cold

1/2 c Wesson cooking oil

1 c mashed sweet potatoes (fresh or canned)

Instructions

Mix ingredients well.Bake at 350*degrees for 1 hour and 15 minutes in a well greased tube pan.Bake only 35 minutes if using layer pans.

Cream Cheese Icing as follows:

3 oz cream cheese (softened)
1 stick butter
1 lb. powdered sugar
1 tsp vanilla
2 tablespoons milk

Combine ingredients and add just enough milk to make icing of spreading consistency.
