Stay Away Shrimp…We Want Chicken!

I will frequently take chicken out of the deep freezer to thaw, not having any idea what I’m going to do with it later that day. Whenever I come up empty-handed, this is my go-to recipe. I always have all the ingredients on hand, and it’s done in just a few minutes. Ingredients

1/2 cup Land O’ Lakes butter

1/4 cup olive oil

1/4 cup finely chopped green onions

1 tablespoon minced garlic

juice of 1 lemon

2 pounds of chicken breast, boned, skinned and cut into 1/2 inch pieces

1 teaspoon salt

1/2 teaspoon McCormick’s black pepper

 

 

Instructions

In skillet, heat together the butter and olive oil and saute the green onions and garlic.

Add the lemon juice, chicken, salt, and pepper.

Continue cooking, stirring constantly for 5-8 minutes or until chicken is done.
