After my sister moved to the big city, she had me come and stay with her for the weekend. When we went out to eat that first night, she took me to a fancy seafood dinner…because that’s what they do in the city.
That was the first time I had ever seen shrimp in person. I know, pretty crazy, but we just didn’t eat it at home. I ordered a shrimp scampi and it was divine! I couldn’t wait to get some shrimp and whip it up at home.
When I went to the grocery store to buy some, I almost fell over looking at the price tag…well, that’s not going to work. I thought about what else could go in place of the shrimp and chicken was on sale right next door.
I took it home and gave it a try and it was just as yummy…but much more reasonably priced. Whenever I have the craving for scampi now, if I can’t spring for the shrimp, I’ll replace it with chicken, just like they did in this recipe on Group Recipes.
It’s always tasty and my husband…who despises seafood…loves it too!
