Sour Cream Chicken Enchilada Bake – It’s A Pretty Big Deal

The first time I heard about Enchiladas was when I was about 8 or 9.

I have four aunts, and they and my Mom used to have monthly dinners at each other’s houses. I just happened to be nearby (nope, I wasn’t snatching cookies from the tray on the table) when I heard one of them use the phrase, “the whole enchilada” in a hearty conversation with her sisters. Since I was still a kid back then, my first thought was it was some sort of word that meant “entourage”. Yes, I am talking about the “the whole entourage” phrase.

It wasn’t until in high school that I learned what the word truly meant—enchilada was food.

It was also just then that I learned that the creamy chicken dish that that same aunt always brought to reunions was actually called enchiladas.
