Slap Me Silly Slow Cooker Beef Stroganoff Casserole

My daughter was in the basketball finals last week. She had worked so hard to get where they were. We had spent night after night, week after week sitting up in the stands cheering her on. Every time she had a game, I tried to make something that would pack her full of energy so that she would last through the entire game. Going out to eat was not an option on finals night. For that game, I new she wanted to arrive early, so I was sure to find a recipe that I could have done when she got home from school.

I found this recipe on Group Recipes and knew it was the winner. It had the protein she needed to charge up and the convenience that we all needed to get to the game on time.

We all ate before we took off for the biggest game of the year. That night, we didn’t even have to make a trip to the concession stand…good thing because I didn’t want to miss out on any of the action!

They won the game that night and took the state title! Maybe it was the dinner, maybe not…either way it was an awesome night for all of us.
