Sausage, Carrot, And Potato One-Pan Dinner Bake

Of course, we wouldn’t let our kids go hungry. That’s just a silly joke. My daughter actually asked if she could have some of this sausage bake off my plate. She has always loved meat and veggies, and that’s exactly what this was. She really enjoyed what I did give to her, so I was sure to get the recipe from sis so I could make it for everyone at home. It was one thing I could easily fit in my suitcase, even though I wished I could have stuck my sister in there instead!

Ingredients

1 pkg Johnsonville sausage links (i used mild Italian) OR Kielbasa cut into chunks
1 large green pepper, cut into strips
1 large red pepper, cut into strips
1 large yellow pepper, cut into strips
1 large white onion, cut into thin rings
3 lb red potatoes, cut into quarters obite-sizeze pieces
1 pkg 8 oz., sliced fresh mushrooms
olive oil to lightly coat all
Morton salt, pepper, onion salt and parsley

Instructions

Easiest dish to make! Only have to cut all sausage links into bite-size pieces.

I put all of the sliced veggies into a large bowl, coat all lightly with olive oil and toss to coat. Add the sliced sausage pieces to this and spread out on two baking sheets.

Bake at 400 degrees, tossing every 15 minutes or so for an hour. I made all the day before and only baked for 45 minutes, then the day needed I baked for the final 15 minutes to warm through.
