My family and I were heading down state to spend some time with my sister and her family. It was a break for the kids in school, which actually landed on the same week, and so we all took a few vacation days. No matter what was happening in our lives, when we got to spend time together, it seemed to make it all a little better.
We like to go out to eat, but once is enough with a bunch of little kids. So, we usually try to meal plan while we are there so that we can eat something tasty without trying to wrangle everyone in a restaurant.
My sister had mentioned salsa chicken, a recipe that she had seen on All Recipes. It sounded simple and pretty tasty, so we went shopping and got the ingredients along with everything else we would need while we were there.
This dish went together so nicely, and it came out perfectly. It tasted really good and even the little kids liked it. I was sure to take this recipe back home with me from that trip.
