Rise And Shine With Amish Ham And Egg Breakfast Casserole

I’m really excited about this recipe because it includes three of my most favorite foods: ham, cheese, and eggs. I love making breakfast casseroles that contain those things and I can scarf them down like nobody’s business. I am thrilled that Amy from the Amy Loves website would share this delicious recipe with all of us. She did an amazing job with getting the right combo of ingredients together. All I can say is, “Yum”!

My hungry family was kind of annoyed when I stopped them from cutting into this dinnertime goodness while I got a few photos of it!

Ingredients

1 lb ham, cubed

1 med onion, chopped – optional

6 eggs

2 or 3 baked potatoes, diced into chunks*

2  cups Kraft shredded Cheddar and Colby Jack cheese

1 1/2 cups Breakstone small curd cottage cheese

Instructions

Combine the ingredients in a large mixing bowl.

Transfer to a greased 13 in x 9  in baking dish.

Bake , uncovered , at 350 degrees F for 35- 40 min or until set and bubbly.  Let stand for 10 min. before cutting.
