Really? There’s Rice In This Sweet Pie? Really!

My Grandma married my step-Grandpa when she was in her late fifties.

After being married a couple of times before, they didn’t want to do a big fancy wedding. It was a simple exchange of vows and then a nice dinner with the immediate family at a local banquet hall. They even did potluck style so that they weren’t spending a lot of money. My Grandma is an amazing woman, and so is my step-Grandpa, so nobody hesitated to do what they could to help and make their day as special as it could be without going overboard.

My new Grandpa, the only Grandpa that I had ever known growing up, is Italian…did I mention that? Oh boy oh boy! It’s always a fantastic meal when his family is in on the potluck. Pasta and sausage dishes and casseroles and desserts as far as the eye can see. I’ve never been big on super sweet desserts, so I was drawn to this pie at the wedding.

I was told it wasn’t too sugary, so I figured I’d try it out. It was just like this recipe from the web. The flavor was really good. It was just enough to be a dessert, but not too much that it hurt my teeth! Oh, Grandma and Grandpa are still happily married today too…almost 30 years later!
