My parents had friends that lived out on a big ranch out in the country. I just loved going there when I was younger. There were so many animals, so much to do, and it was just so beautiful. We would often take the two hour trip to their house and stay in the guest house for the weekend when the weather was nice. During the day we would go swim in the pond, ride the horses, and go for nature walks.
At night, we would all meet in the main house for a big family meal. Besides horseback riding, this was my favorite, and most memorable part of those trips. Mom’s friend, who we called Aunt Fran, was an amazing cook. She always made mouthwatering meals that we never had at home.
I think it was the freedom of the open air that made her enjoy her time in the kitchen…but who knows. One of my favorite meals was this creamy chicken spaghetti casserole like the one on The Pioneer Woman.
It was so rich and yummy, and there was always so much of it. It was the perfect solution to a pack of hungry kids after a busy day!
