I was sure to have mom write that recipe down for me, along with a few of her other specialties. Now that I have my own house and growing family, I need to start figuring out how to cook some of these things for myself. I don’t want my kids growing up only getting yummy homemade food at Grandma’s. This was the first one a tried when I got home and it was so simple. I’ll be making it again soon. “Time to break out the casserole dish! I love the french onion addition here, PERFECT!!”
This is so easy to make, you can serve it on your busiest of weekdays along with your favorite entree.
Ingredients
1 1/2 tbsp olive oil
5-6 medium size potatoes (I used Yukon Gold), sliced into 1/2 thick half slices
1 large onion, sliced
1 stick Land O’ Lakes butter, cubed
1 10 oz. can Campbell’s french onion soup
1/2-1 tsp Morton salt
crushed black pepper
Instructions
Preheat oven to 350.
Drizzle olive oil in a 9 x 13 casserole dish and spread it to coat the bottom.
In a large bowl, mix potatoes, onions, butter, french onion soup, salt, and pepper.
Pour into casserole dish.
Bake at 350 for 1 hour or until potatoes are fork tender.
