Potato Pancakes Just Like Mom’s

My mom never liked traditional pancakes, so she always opted for potato pancakes when cooking a nice breakfast for us. Back then, I couldn’t get enough of the flavor of these unique little things. It always tasted like half pancake, half hashbrown, and that’s a great combination. One day, the taste for a nice potato pancake hit me so I decided to browse the internet and see what kind of recipes were out there.

I found this one on All Recipes and it seemed like something I would be able to handle. There weren’t many ingredients and there were only a few steps of instructions. I can do that.

I served these to my husband and three kids and they all loved them. I couldn’t keep them coming fast enough. I actually had to mix up the list twice so that we had enough. There were a few leftover and they reheated deliciously. We will be having these again a lot I can see.
