Oven Roasted Herb Potatoes Are Your New Favorite Side Dish

My daughter got married last year and her typical budget-friendly fashion, she decided that we would make all the food ourselves. What she really meant was that Mom and Grandma were going to make all the food. At least she did us a solid and allowed us to create the menu. We decided to go with chicken and potatoes…because it’s easy. I wanted it to be a fancier dinner though, after all it was my only baby’s special day.

I found this recipe for oven roasted potatoes on Spend with Pennies and they had the exact look I was going for. I shared the idea with my mom and she said, “Let’s do it!” The greatest part was that there was no peeling involved like there would have been for mashed potatoes.

We had to make a much larger version of the recipe listed below for a party of about 100 people but it really wasn’t too bad! When they were almost cooked through we tossed them in the slow cooker to finish baking and they were perfect! And so was my daughter’s wedding day.
