The One Recipe That Makes Reubens Weight Watcher Friendly!

My husband did end up getting the partnership deal… not that there was ever any doubt on my end. He says that if it wasn’t for the meal it would have been a little less likely…but I think he was just being nice.

I know his boss enjoyed it though because she asked me to share the recipe with her before she left. She was amazed by the fact that this is actually a very lean meal, despite the rich flavor. One serving is less than 300 calories, so it’s great for all of us who try to watch our figure!

Ingredients

1 lb corned beef lunch meat

6 slices dark bread, crumbled

6 slices reduced fat swiss cheese

16 ounces sauerkraut, drained

1/2 cup low fat Thousand Island dressing

 

Instructions:

Preheat oven to 350F. Spray a 9×13-inch baking dish with nonstick spray.

Place the bread slices on the bottom of the prepared dish, then layer with the meat and sauerkraut.

Dot with the dressing, and then top with Swiss cheese slices.

Cover with aluminum foil and bake in the preheated oven for approximately 20 minutes, then remove foil and place back in oven for another 10 minutes. Let cool about 5 minutes before serving.

Quick tip: You could use whole wheat bread instead of rye.
