No Peeking Chicken Perfect For Passing Out

It may sound funny to tell this story when thinking about a meal for dinner for your family, but I have to be honest. The first time I tried this chicken was when I was at my great-aunt Mae’s funeral. We loved her dearly, and of course we all went to pay our respects. Of course, after the funeral, we all went to the church basement for a nice meal with the closest of family and friends that were in attendance.

All of my other aunts took over the meal prepping and preparing…God bless them all. One of the items on the menu was this chicken and rice dish. Now, I know we were in mourning, but I couldn’t help but get excited a bit over this dish. I don’t know if it was from crying or what, but I was starving and this hit the spot.

It seemed to not only fill me up, but also comfort me a bit about the loss of one of our most beloved family members. When I asked where the recipe came from, they said that they found it on Group Recipes. I went home and looked it up and have made it for my family several times since then.

It’s a new favorite at our house, and whenever it’s on the table, we always share our favorite memories of our great-aunt Mae.
