New Year Resolution Dijon Crusted Fish

 

This fish recipe is perfect for lunch or even dinner. The different flavors going on in one dish will be enough to satisfy any type of food lover. It’s also easy to prepare! So you don’t have to hassle yourself with the preparation. Our friend over at Taste Of Home has this to say about this recipe:

“Dijon, Parmesan and a hint of horseradish give this toasty fish from Scott Schmidtke of Chicago, Illinois lots of flavor. The preparation is so easy, it takes just 5 to 7 minutes to get 4 servings ready for the oven.”

I cooked this once for a friend who’s been complaining that she needed to eat something that’s not fattening at all. I don’t know why she’s complaining because she’s thin as a reed.

But then again, girls think like that at times. She devoured a couple of this though. Well, if she wasn’t on a diet, then she would have eaten four.

 

Ingredients

3 tablespoons Kraft reduced-fat mayonnaise

2 tablespoons Sargento grated Parmesan cheese, divided

1 tablespoon lemon juice

2 teaspoons Heinz Dijon mustard

1 teaspoon Heinz horseradish

4 tilapia fillets (5 ounces each)

1/4 cup Progresso dry bread crumbs

2 teaspoons Land O Lakes butter, melted

 

Instructions

In a small bowl, combine the mayonnaise, 1 tablespoon cheese, lemon juice, mustard and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over fillets.

Combine the bread crumbs, butter and remaining cheese; sprinkle over fillets. Bake at 425° for 13-18 minutes or until fish flakes easily with a fork.
