My very best girlfriend had a birthday coming up. Usually we went out to a nice dinner with a group of our closest pals. This year, she wasn’t really feeling it. She was turning 40 so she wasn’t really excited about the day. I didn’t want her to sit at home alone mourning though. I already know that her favorite food is Mexican, and in fact, that’s probably where we would go and eat if we did go out.
So, instead of letting her cry alone, I baked up this taco pie that I found on All Recipes. I took it to her house where she was loafing around in her slippers and sweatpants. Her face lit up when she saw me, but I think it got even brighter when she saw this taco pie.
We sat and devoured pretty much the whole thing together. After staying up to the wee hours of the morning discussing her new decade, I think I have her convinced that it’s going to be a good year! Maybe it was me…maybe it was the taco pie…who knows?
