Mrs. Fields’ Southern Breakfast Scramble

I slept over at a friend’s house because of work. We were partners in this particular project. While the client was a kind man who was so good in managing his own business, he kind of changed his mind all of the time. My friend and I needed to finish something he wanted to change immediately so we had to burn the midnight oil for that. That day, I felt like I intruded in a mother-daughter bonding.

Her mom came to visit and they were supposed to watch a play later that night, but I came with the bad news brought by work. Her mother understood of course. But it was obvious she was quite a bit sad about it.

My friend told me to just allow her mother to feed us and she would be back to her happy self. It was true though. So while we were working, her mom got busy in the kitchen. Soon enough, the house was filled with the most enticing aromas.

Every hour, her mother brought us new food which she cooked. I felt like I was about to burst from happiness and from overeating. The next morning, she even prepared us this wonderful southern breakfast scramble that tastes so good with bread.

I managed to ask for another serving. It was a good thing there was still something left in the pan. You will see a similar recipe in the next page.
