Mr. Mom’s Mexican Fiesta Casserole Complete With Tortilla Chips

You can most definitely serve this casserole as a meal but I also like to serve it as an appetizer during parties and football games. You’ll find this dish very easy to prepare and it can be either halved or doubled depending on your needs. I once made this casserole for a church potluck and it was a mega-hit with the kids. I like to serve it with extra tortilla chips for added crunch and dipping. Don’t forget the guacamole, salsa, and sour cream!

 

This casserole really is easy to make. And guess what? The results are fabulous!

 

Ingredients

8 ounces ground beef

1 (12 ounce) can wholeGreen Giant kernal corn, drained

1 (12 ounce) jar chunky salsa

1 (2 1/4 ounce) can sliced pitted black olives, drained

1 cup Borden cottage cheese

1 (8 ounce) low-fat Daisy sour cream

5 cups Tostitos tortilla chips

2 cups Kraft shredded cheese

1/2 cup chopped tomato

Instructions

Brown ground beef in large skillet, drain. Add corn and salsa; cook until thoroughly heated. Reserve 2 tbsp olives; stir remaining olives into beef mixture. combine cottage cheese and sour cream in a small bowl.

In 2-quart casserole, layer 2 cups chips, half the meat mixture, 3/4 cup cheese and half of cottage cheesee mixture. Repeat layers; cover.

Bake in preheated 350-degree oven for 35 minutes. Line edge of casserole with remaining 1 cup chips; top with tomato, reserved 2 tbsp olives and remaining 1/2 cup cheese. bake 10 minutes or until cheese is melted and chips are hot.

I don’t like hot tomatoes, so I sprinkle them on top after this is baked.
